When asked why Darlene enjoys being part of the Engine 2 Culinary team so much, she says: “Food = Fun, and we have a lot of both in the E2 kitchen!”
Darlene’s life changed the moment she began watching “Forks Over Knives” back in 2011. The documentary made so much sense to her and she instantly began her journey to the WFPB way of eating and living. With the increased energy and health that this provided, she decided to help others by becoming a Health and Wellness Coach through the Institute of Integrative Nutrition (NYC). To gain a deeper understanding of WFPB foods, she enrolled in the Natural Epicurean Academy of Culinary Arts (Austin TX) where she was trained in Macrobiotic, Ayurvedic, Vegan, Vegetarian, Raw and Living foods. She completed her training by interning at her dream job with Rip Esselstyn, Brenda Reed, and Engine 2 Immersions. She then became a certified Food For Life instructor for the PCRM under the direction of Dr. Neil Barnard (Washington DC), and recently became a Functional Medicine Certified Health Coach through the FMCA (Chicago IL.). In addition to this, she is now a National Board Certified Health and Wellness Coach through ICHWC. Darlene’s clients love eating and learning their way to better health through working with her.
She and her plant-based husband have been married for over 35 years, have raised four of the most wonderful plant-based children EVER! And are grandparents of three plant-based precious souls!
